I was taking an inventory of my pantry today and found a box of Raisin Bran Cereal that needed to be used up.
I have a recipe for raisin bran muffins, but my family is not fond of those so I started looking for a cookie recipe. I didn't really find anything that appealed to my taste on the internet so I decided to combine the ingredients from two of my favorite cookie recipes to come up with this one. My family is not fond of raisins so I added the chocolate chips and nobody noticed the raisins in the cereal!
Raisin Bran Cereal Cookies
Makes 3 dozen
1 cup softened butter or shortening
1 cup packed brown sugar
1/2 cup white sugar
2 eggs
2 teaspoons vanilla
2 tablespoons honey
1 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder
2 cups white flour or (1 cup white flour and 1 cup whole wheat flour)
3 cups raisin bran cereal
1 cup chocolate chips
1/2 cup chopped nut, walnuts or pecans (optional)
In a mixing bowl, cream butter and sugars. Add eggs, vanilla and honey, mix well. Add flour, salt, baking powder and soda, mix well. Add raisin bran cereal, chocolate chips and nuts, stir.
Drop by teaspoon on to baking sheets.
Bake at 350-degrees for 10-12 minutes.
Remove cookie sheet from oven and allow cookies to cool on baking sheet for 5-10 minutes before transferring to cooling rack.

They look so good. I like to use up things that would otherwise be wasted. I just did a re-post about my messy pantry because it is a disaster again. Maybe I can put some of it to good use like this.
